The farm-to-table restaurant will serve people in several ways. A new restaurant providing fresh seasonal meals will allow the community to come together as friends, family and loved ones. This will also attract travellers en route to stop for this new trendy restaurant with a side of history. The colour 'heritage green' suits the project as it is a heritage building. The use of historic newspapers will emphasise the rich history the Old Gillitts Train Station offers. The private window with a kitchen view allows for private dates. The use of subway tiles connects to the theme of the train station.

This building will offer more than just a restaurant. There will also be a coffee shop. The coffee shop will allow anyone to grab a quick coffee and baked goods on the way to a vacation destination, after a social run or bicycle ride. This will also provide a safe area where scholars can gather and any business meetings. The use of green terrazzo tile connects to the nature scene of the site while providing a tranquil space to enjoy a coffee. The classic dado panelling is run through from the restaurant to the coffee shop. This binds the two areas.

As previously mentioned, the building will offer more than just a restaurant. A shopping area will also be selling fresh produce or freshly baked products. The shop will provide the community and travellers with a pit stop where they can quickly buy local and seasonal products. These three sections of the building will serve the community in several ways with the spirit of the heritage the facility offers. This new farm-to-table restaurant, coffee shop and shop will keep serving, doing the previous building justice.
